Another way of increasing your stamina is by collecting Anemoculus. These are collectibles that you can find in the open world. They look like crystals. These are scattered around the map so finding them all is not all that easy to do.
Once you do find one then you can head over to a Statue of the Seven and deposit a soul there. Doing so will increase your stamina. You need to do this every time you find an Anemoculus and your stamina will increase pretty fast.
